Bunny Cake from Mippers
Simply follow the directions for a boxed white cake mix, and bake in a
round cake pan. Now, make any white frosting... a home made butter
cream is my favorite. Just mix a cube of butter with a small box of
powdered sugar, add about 2 TBSP. milk, and 1 tsp. vanilla, whip until frosting consistency. When the cake is done baking, let it cool, then cut in half.
Frost the tops and stick together with the flat side down on a large
plate. Then frost all sides and top. So, you now have a half circle
covered in white frosting. Now, take a bag of white flaked coconut, and
reserve out about 2 cups. Use the remaining coconut to cover the half
circle. To get it to stick, press it into the frosting with the flat palm
of your hand. When that is complete, take the reserved coconut, and place
in a mixing bowl and add 2-3 drops of green food coloring, and stir until
coated. You now have grass to arrange around the base of the bunny.
Now, you can sprinkle those posey shaped frosting sprinkles on the grass you can find at the grocery store. Next, cut 2 bunny ears from white paper
plates and insert at one end of half circle, about four inches back from
the end. I use lipstick to pink the inside of the ears! Now, add a pink
jelly bean nose, and two raisin eyes, or 2 black jelly bean eyes, and
voila! You've got yourself the cutest cake ever!
