Frosted Pumpkin Cookies
2 cups flour,
1 cup quick or old fashioned oats, uncooked,
1 tsp. baking soda,
1 tsp. ground cinnamon,
½ tsp. salt,
1 cup butter or margarine, softened,
1 cup brown sugar,
1 cup sugar,
1 egg, slightly beaten,
1 tsp. vanilla,
1 cup pumpkin,
1 cup white chocolate morsels
Frosting
One 8 oz. pkg. softened cream cheese,
1 -2 cups powdered sugar
combine flour, oats, baking soda, cinnamon and salt. Cream butter;
gradually add sugars, beating until light and fluffy . Add egg and
vanilla; mix well. Alternate additions of dry ingredients and
pumpkin, mixing well after each addition. Stir in morsels. For each
cookie, drop by 2TBSP size onto lightly greased cookie sheet. Flatten with bottom of glass dipped in powdered sugar. Bake at 350 degrees for 20 to 25 minutes, until cookies
are firm and lightly browned. Remove from cookie sheet; cool on wire
rack.
Ingredients
Frosting
Mix cream cheese with one cup of powdered sugar. Keep adding powdered sugar until the frosting is of smooth spreading consistency. ENJOY! Submitted by ME! I made this up!
Variation: May add orange food coloring to frosting for a more pumpkiny look!
